Bangalore: Students of the International Institute of Hotel Management (IIHM) Bangalore participated in ‘The Art of the Blade’, an interactive culinary session organised by IIHM Bangalore in collaboration with Tramontina and RG Hospitality. The one-day programme introduced students to professional kitchen practices, knife skills and elements of Brazilian cuisine through live demonstrations and interaction with an industry expert.

The masterclass was conducted by Chef Vijay Bhaskaran, Brand Ambassador for Tramontina, who demonstrated professional knife-handling techniques and the use of kitchen tools. Students were introduced to aspects such as safe handling, care and maintenance of knives, as well as the importance of control, accuracy and consistency in food preparation.

Knife skills form an important foundation for students pursuing culinary arts, as proper handling and technique are required before progressing to more advanced kitchen practices. The session allowed students to observe these fundamentals in a professional setting and understand how equipment is used in a working kitchen.

The programme also provided students with exposure to Brazilian cuisine. Through live demonstrations, Chef Bhaskaran showed how ingredients, preparation methods and kitchen equipment come together during the cooking process, giving students an opportunity to explore culinary practices beyond their regular coursework.

Dr. Suborno Bose, Chairman and Chief Mentor, IIHM, said that hospitality education needs to maintain a connection with professional practice. He noted that industry collaborations can give students opportunities to learn from practitioners, work with professional tools and explore culinary traditions from different parts of the world.

Sanchari Chowdhury, Director, IIHM Hotel School, Bangalore and Head-South, said knife skills are among the first fundamentals students need when pursuing culinary arts professionally. She added that the session helped students understand these basics while gaining exposure to Brazilian cuisine.

Hosted by RG Hospitality, founded by hospitality professional Rekha Ghosh, the programme was open to students across IIHM Bangalore. The collaboration also marked Tramontina’s new association with the institute.

The session highlighted how industry-led learning can supplement classroom education by giving hospitality students practical exposure to professional techniques, equipment and international culinary practices.
