Mediterranean Brown Rice Salad: Filing, Gluten-free Dish
The Mediterranean gluten free dish is quick and easy to prepare
It combines the flavors of a classic Greek salad with spinach and rice

Ingredients
• one cup brown rice, uncooked and rinsed clean
• Two cups spinach, chopped
• One small cucumber, diced
• One-fourth cup red onions, diced
• One-fourth teaspoon salt
• One-fourth cup kalamata olives, chopped
• half green bell pepper, diced
• One cup grape tomatoes, quartered
• One-fourth cup feta cheese, crumbled
Dressing
• Two tablespoons extra virgin olive oil
• one clove garlic, pressed or minced
• one-fourth teaspoon ground black pepper
• two tablespoons lemon juice
• one-fourth teaspoon dried oregano
• ½ teaspoon salt
Take a large bowl; combine the cooled rice, spinach, cucumber, tomatoes, bell pepper, red onions, olives, feta cheese. Then toss to combine.
Take a small bowl, combine the entire dressing ingredient and then pour them over the salad and toss them to coat
You must serve them cold or at room temperature
